4 Large zucchinis (to make noodles)

5oo grams of turkey mince

1 tin crushed tomatoes (400gram)

1 brown onion finely diced

2 Tablespoons of tomato paste

2 cloves of garlic

2 Teaspoons of dried oregano

Salt & Pepper

Parmesan cheese to garnish


Serves 4 – 5



  1.  On a medium heat gently sauté diced onion and garlic until onions become translucent.
  2.  Add the turkey mince and sauté until meat is cooked through.   Add the tomato paste and season with salt, pepper and oregano. Add the tin of tomato to combine the sauce.
  3.  Turn down the heat to a gentle simmer and cook for 30 – 45 minutes stirring occasionally. You may need to add some water to this mixture if it becomes a bit dry.
  4.  Serve on a bed of raw zucchini noodles and sprinkle with grated parmesan cheese.
