Choc-Nut Energy Balls
These chocolate balls are so simple to whip up! Vegan and will satisfy your chocolate craving – ENJOY!
1 cup of raw mixed nuts (any nuts work for this recipe)
8 Medjool dates
½ cup shredded coconut
2 Tablespoons of cacao
1 Tablespoon of water
Desiccated coconut for rolling
Makes 16-18 balls
- In a food processor blend the dates (check you have removed the seed) and water and process until smooth.
- Add the nuts, coconut and cacao and pulse until the mixture comes together. I like a few chunky bits so I don’t over process this mixture.
- Next take a heaped tablespoon worth of the mixture and roll into a ball and dust in the desiccated coconut. Store in an airtight container in the fridge.

*Recipe Notes – You may need to add a tiny bit more water to the mixture to help it combine or some desiccated coconut if it’s too wet.
