*Almond Pancakes

¾ cup almond meal

1/3 cup of oats

2 eggs

1/3 cup of water

2 Tablespoons of Natvia sweetener

1 Teaspoon of baking powder

Coconut oil for cooking

*Berry Compote

1 cup frozen mixed berries

2 Tablespoons of Natvia sweetener


Makes 6-8 large pancakes



  1. In a blender combine all your pancake ingredients and blend until it becomes a smooth batter.
  2. Lightly grease a hot non-stick pan with a little coconut oil and pour batter to make a large pancake. Once bubbles appear you are ready to flip your pancake and cook the other side until golden.
  3. Next to make the berry compote, place frozen berries and sweetener into a microwave safe bowl and cook for 2 minutes. Mash mixture with a fork.
  4. Layer the pancakes with Greek yoghurt and the berry mixture.
